INGREDIENTS
12 ounces cooked beef (such as steak, roast, pot roast or deli roast beef), thinly sliced
4 eggs or 1 cup egg substitute
1/2 cup chopped fresh baby spinach
1/2 cup diced tomatoes
Salt and pepper (optional)
4 slices reduced-fat Swiss cheese

Beef and Egg Breakfast Mug
INGREDIENTS
1 recipe Basic Country Beef Breakfast Sausage (recipe follows)
1 cup chopped fresh vegetables such as tomato, baby spinach, bell pepper, zucchini or green onion
1/2 cup shredded reduced-fat cheese such as Cheddar, Monterey Jack or American
8 large eggs
Salt and pepper (optional)

INGREDIENTS
12 ounces Ground Beef (96% lean)
1 medium red bell pepper, chopped
1 small onion, finely chopped
2 teaspoons ground ancho chile powder
1/2 teaspoon ground cumin
4 eggs, beaten
2 tablespoons water
1 tablespoon finely chopped fresh cilantro
